Noon Zard, or fat bread, is a yummy dish as long as it is made properly. In modern days it might sound bizarre but until only recently it constituted the lunch meal for wedding ceremony in the groom's house.
Ingredients for 5 people
High-fat meat, boneless, 1/2 km
Chickpeas split in half, 2 cups
Onion, large, 1 no
Salt, turmeric, as required
Powdered saffron, 1 tbsp
Animal fat, 4 tbsp
Red Raisins, 1 cup, optional
Chop onions into small pieces and sauté in oil. Cut meat into small pieces as well and add in. Also apply spices and water and put on the stove. Sauté split chickpeas; do this to avoid crushing chickpea during cooking. After half an hour when it starts boiling add in chickpea. At the end of cooking process add saffron powder. Once cooked, lightly fry raisins and add them along with the oil. Pour the stock inside a deep large dish and soak bread pieces so they turn yellow.
Once one side of them is yellow thoroughly, put the prepared stew over bread pieces and serve it in a dish.
