Sirabij or Siravij is a local dish in Gilan Province.
Ingredients,
Eggs, 6 nos
Frying oil, as required
Turmeric powder, 1 tsp
Salt, as required
Black pepper powder, as required
Procedure
Sirabij
Sauté Garlic leaves in a little oil until smooth. Add turmeric and sauté for more minutes.
Break eggs inside a bowl and beat with a whisk until you get an evenly liquid. Then add in salt and pepper and beat again.
Add beaten eggs to garlic leaves and let it get solid.
When almost solid, stir mixture slowly till it is fried smoothly. Then remove from the heat and transfer into a desired dish.
