Ghorut or Ghurut is a local dish in Birjand, South Khorasan Province.
Ingredients
Walnuts
Onions
Dried mint leaves
Salt
Black pepper
Cinnamon
Oil
Water
Directions
Ghorut
First put walnuts and Ghorut powder( Kashk is called Ghorut in the area) inside a blender and pour in 2 glasses of water and mix till well blended. In a pot put chopped onions and fry in drops of oil. Once golden brown and light, sprinkle in dried mint leaves, salt and black pepper.
Take the charming dark purple mixture out of the blender into the pot and bring into a boil. You can cook it to your desired consistency. Serve it with mashed potatoes and Eggplants or mixture of cooked lentils and boiled potatoes. Bon Appetit!
