Sweet Kuku is among the traditional dishes in Ghazvin.
Potatoes, Medium-sized, 5 nos
Eggs, 4 nos
Sugar, 1 cup
Water and rosewater, 1 cup
Saffron, as per taste
Salt, as per taste
Cook the potatoes. Peel them off and as they are still hot, grate with a box grater in tiny size. You can also grind.
In a bowl, crack the eggs and beat well. Add in 2 tablespoons sugar and beat again. Whisk in oil and salt along with ground potatoes and mix. Pour Oil in a non-stick frying pan and when it is hot, Spread the mixture all over the pan. Once one side is golden brown, flip over to fry the other side.
In a saucepan, combine together sugar, water, rosewater and saffron and set on the heat. Once it is simmering , remove from the heat. If desired , you can make it thick in consistency by allowing it to stay over the flame for an extra couple of moments . Pour the sweet boiling liquid over the prepared Kuku and reduce the flame to low till the sweet liquid is absorbed well into the round-shaped Kuku. Transfer to a platter and garnish with leaves of green basil and cut into wedges. Serve either hot or cool. It is served with fresh Persian bread. Bon Appetit!
