The dish is a good option for the vegetarians who do not consume meat at all. The vegetables in this cuisine are fresh and fragrant and make for a rich nutritious food.
Ingredients
Enough to make 20 Kuftas
300 g Green beans
2 tablespoons barberries
2 tablespoons chopped walnuts
3 tablespoons powdered toasted bread
1 egg
Salt and freshly ground black pepper for seasoning
Parmesan cheese, if desired
Directions
Cook the green beans in water in a pot. You can also steam beans till softened. Put them in a mixer and crush well. Add in chopped walnuts as well and mash to get a soft creamy mixture. Then put inside a mixing bowl and add the barberries followed by toasted bread powder , and the egg. Mix well to get a consistent mixture. If it is not consistent, apply bread crumbs or chickpea flour. If desired, you can apply Parmesan cheese. Season to taste with salt, pepper and turmeric powder. Mix well all the ingredients . Take a walnut-sized piece off the mixture and shape into a ball with your palm. Pour Oil in a saucepan and allow to heat. The amount of oil should cover a height of one knuckle at least. Put the ball ( Kufta) in the hot and roll every now and then till the Kufta is fried all over. Repeat this with all the ingredients. After frying, put the fried balls on a paper towel till their excess oil is absorbed. It is ready to serve. Arrange in a serving dish and garnish with spinach leaves. Serve with fresh Persian bread. You can make red hot sauce; sauté in oil 1 or 2 pressed cloves garlic (in a saucepan ) and add 2 tablespoons Tomato paste. Sprinkle with salt and freshly ground black pepper and keep sautéing. Pour in 1/2 cup water and allow to thicken on high heat. Drench Kuftas in the sauce.
