Ingredients:
1 kg apricots
900 g sugar
1/2 cup rosewater
1 tablespoon brewed, thick saffron
1 teablespoon lemon juice

If you apply firm apricots , you will have a far better jam.
Put sugar in water in a pot and and bring to a boil. Put inside the apricots, cut in halves, and let it simmer 5 minutes. If you use are very loose, you don't need to boil for this amount of time.
Turn off the heat and add in rosewater and saffron. Allow to cool. Put in a jar and keep in a cool place.

1 kg apricots, seeded and cut in halves
1 kg sugar
1 tablespoon lemon juice
3 tablespoons apricot nuts
3 glasses water
Procedure
Put the apricots in an enamel pot along with water and allow 15 minutes over the heat. Put the sugar in the oven and heat a bit but make sure not to overheat to melt. Then add the sugar as well as the nuts. After a few minutes drizzle drops of lemon juice and allow to thicken over the heat; put a spoonful of the jam in a small plate and shake. If it doesn't spill, it is thick enough. Turn off the heat and put in a jar. Close the cap. Put the jar upside down and allow to cool.
