4 Medium-sized eggplants
2 tablespoons Sugar
1 cup sour pomegranate
2 to 3 Medium-sized onions
Salt, pepper and turmeric powder for seasoning
1/4 cup water
1/2 cup cubed walnuts
First, peel the eggplants and put inside the salted water to remove its bitter taste. Then dry them thoroughly and fry in oil. Keep aside. In the same dish sauté chopped onions till golden. Then add in the pomegranate seeds and sauté finely. After that, add in the cubed walnuts, and season to taste with salt, pepper and turmeric powder. Pour enough water and allow till the water is evaporated. Take the fried eggplants and stuff the center if the eggplants with fillings.
