Ghisava, is an extremely delicious and nutritious dish which is usually eaten as breakfast on cold days. It is used in 3 Azeri speaking provinces of the country.
Ingredients,
Dates, 250 g
Butter, 50 grams
Ground Walnuts, 1/2 cup
Eggs, 3 nos
Procedure
Remove the dates seeds and fry them in butter. When dates are thoroughly soft and mashed, add in walnuts, stir frying till walnuts are tender. At the end, break eggs in a bowl, beating till smooth. Add it into the dates paste. Once eggs are cooked you it is ready. You can serve it hot with fresh bread.
Cooking tips,
1. During the whole process of cooking, the heat should be mild to avoid burning dates.
2. You can apply Shirazi dates as well but you will have to add 2-3 spoons of water to the butter when frying since they are dry but usual dates are much better.
3. In some areas, eggs are not added and the dish is consumed as stew.
4. You can leave out walnuts and eggs altogether. Just fry dates in butter and serve. Of course, it is not Ghisava anymore!
