Peach Kufta is cooked in Shiraz. To your surprise it does n't contain any peach and perhaps it's
called this way since Kuftas resemble the peach.
Ingredients
Minced meat, 300 g
Carrots, grated, 300 g
Eggplants, 1 no
Onion, medium, grated, 1 no
Salt and turmeric powder, as required
Chickpea Flour, as required
Sugar, 1 tbsp
Lemon juice, 1 tbsp
Filling ingredients
Onion, for frying, 1 no
Walnut, currants, prunes ( deseeded) and saffron, as required
Procedure
Mix together Grated onion, minced meat, desired spices and grated carrots and knead finely.
To prepare the sauce, put the fried onion in boiling water.
Now sprinkle chickpea flour over and knead again. Break an egg inside the mixture bowl,
kneading frequently. Try to add chickpea flour gradually to get a firm mixture.
Take a small part off the mixture. Make a peach-sized ball. Make a small well inside and put in
the filling ingredients, Fried onion, walnut pieces, currants, and prunes. Shape it into a ball again.
Try not to make tiny holes or hollow spaces inside Kuftas since they will fall apart and lose their
spherical shape. Put the prepared Kuftas inside the pot and put the lid half-open to avoid
breaking them down into pieces.
To make the dish more savory and eye-catching, you can use brewed saffron to the sauce. Add in
lemon juice, sugar and saffron and let the Kuftas cook over a mild heat. After 1 hour the dish is
