Shahmirzadi Tahchin is a favorite dish in Semnan Province, Shahmirzad City specifically. The city with summer quarters is located 25 km from Semnan. Offering a pristine nature with many blessings, it contains the largest walnuts garden throughout the world. Of note is that the king's of the Sassanid and Partihans took advantage of the charming place to escape from the heat. They made castles in there.
Ingredients
Serves 6
Rice, 5 cups
Cooked lentils, 2 cups
Herbs like parsley, coriander, leek and garlic leaves, chopped, 500 g
Fresh lamb meat, 570 to 1 kg
Turmeric, mixed spices, black pepper powder and salt, as per taste
The ingredients for the center
Kohlrabi, small-sized, 3 to 4 nos, sliced in rings
Beets, small-sized, 5 nos
Potatoes, small, 5 nos
Quinces, cut in rings, 3 to 4 nos
Eggplants, small, cut into rings and fried, 3 to 4 nos
Combination of spinach, sautéed, fried onions and unripe grapes powder, 250 g
Dried plums, 100 g
Soak rice for an hour. Bring to a boil the rice in a pot. Then stir in cooked lentils and finely chopped herbs. Once it simmers again and rice is a little softened, strain it.
Spread the piece of meat like a thin sheet. Season it with turmeric, black pepper, mixed spices as well as salt. Put drops of oil at the bottom of the pot then sprinkle a pinch of turmeric powder and put 3 to 4 spatula of the cooked rice, Lentils and herbs. Put the seasoned piece of meat over the rice. Again top it with rice. Arrange the vegetables ( rings of beets, potatoes, kohlrabi, fried eggplants, sauteed spinach, onion and powdered unripe grapes) all around the pot and in the center. Then put another layer of the strained rice over and cover the pot. Cook over the low flame for 3 to 4 hours until the meat is well-done. Once ready, transfer to a proper platter and garnish around it with the cooked vegetables put in the middle. Ready to serve! Bon Appetit everybody!
In Shahmirzad, they would keep aside the drained water of the rice after straining it. Also, they take 1 spatula of the strained rice, cooked Lentils and herbs. They do it for making Ash. They put a pot over the flame and fill it with the mentioned ingredients in addition to a little Lavashak, or dried sour fruits, and plums paste. They cook it over the very low heat until settled. (it was 2 in 1 recipe, was n't it?)

You are recommended to apply lamb shank or spare ribs.

In Shahmirzad, the meat is n't sautéed or fried at all. In fact it is applied in raw form.
