Kuku is a favorite Persian dish made with fresh vegetables and eggs as the main ingredients.
It is fried in oil and served usually with bread.
Ingredients
1 glass White beans
300 g Chicken breast
1 large Onion, grated
50 g butter
Salt and pepper for seasoning
Oil for frying
2 tablespoons brewed saffron
6 eggs
Directions
First, cook chicken breast and white beans separately and grind them. Put them in a mixing bowl. Grate the onions and mix with salt, pepper , brewed saffron and butter. Crack in the eggs and start stirring the mixture with a spoon.
Heat oil in a non-stick frying pan and spread the mixture round the dish. Allow till one side is fried then flip over carefully and do the other side as well. Once ready, transfer to a serving platter and garnish with the steamed vegetables like broccoli and tomato slices around the dish. Also put pickled cucumber cut lengthwise. Serve with fresh Persian bread; Sangak is preferred. Bon Appetit!
