The nutritious dish is locally made in Saveh, Markazi Province. Ash is a kind of thick soup containing fresh herbs and vegetables and grains.

Ingredients
Fried onion, 2 tablespoons
Salt, pepper and turmeric powder, for seasoning
Tomato paste, 2 tablespoons
Chickpeas, 100 g
Cranberry beans, 150 g
Dried prunes, 300 g
Persian Reshteh noodles, 200 g
Put the fried onion in a saucepan. Add drops of oil. Sprinkle in the spices and add in tomato paste as well. Sauté well and switch off.
Then add in the chickpeas and beans, soaked in water for 12 hours, into a pot. Add in the sautéed mixture and pour in almost 2 liters water. Set on a low heat and allow to cook. After that, stir in the prunes, soaked in water for 15 minutes, and keep cooking. After 15 minutes of time, add in the Persian Reshteh noodles. Allow to cook till the noodles are softened. Once Ash is thickened, switch off the heat. Don't forget to stir occasionally to avoid sticking. Transfer Ash int a bowl. You can garnish with fried onion slices. Serve hot with fresh Persian bread.
