Fandogh Ghatogh is one of the traditional dishes in Gilan Province.
Ingredients
Hazlenuts, 1 kg
Chicken, 1 no
Eggplants, 500 g
Sour pomegranate paste, 3 tablespoons
Tomato paste, 3 tablespoons
Flour, 1 tbsp
Golpar, Persian hog-weed, 1/2 tsp
Pepper, 1/2 tsp
Salt and turmeric, as required

Directions
Break Hazlenuts and put the nuts inside a bowl of water for 1 hour. Remove the outer skin of the Hazlenuts. Wash them and put in a blender along with water. 2 cups of nuts need 6 cups of water.
Once the Hazlenuts are thoroughly ground, transfer into a pot. Season to taste with salt, turmeric and pomegranate paste. Set over the heat and allow it to cook. Add in the pieces of chicken and keep on. Once the chicken is done, mix flour and tomato paste and add into the pot to make it thickened.
After that add in Golpar and pepper. In the meantime peel the eggplants and fry in a frying pan . 5 minutes before removing the pit from the heat, add in the fried eggplants. Once the savory stew is ready, remove to a large plate. Serve hot with rice. Bon Appetit!
