Ghorootoo or Ab-e- Kashk is a traditional dish in Bojnord.
Ingredients
Onion, medium, 1 no
Kashk, 250 g
Yogurt, 250 g
Walnuts, cut into pieces, 50 g
Aromatic herbs, leek, parsley and tarragon
Animal oil or butter, 50 g
Dried mint leaves powder, 1 tbsp
Licorice, 1 tbsp
Salt and turmeric, as per taste
Procedure
First beat the yogurt in a bowl till watery. If you apply sour yogurt, the taste will be better. Add in Kashk, a diary product used in Persian cuisine, and mix till smooth. Then add in 2 1/2 glasses of water and set the pot over the flame till you get rather thick liquid.
Put the butter or animal oil inside a saucepan and fry the chopped onions till golden brown. Stir in dried mint leaves powder plus turmeric.
Add in the chopped herbs and sauté for a couple of moments.
Add in pieces of walnuts and Licorice and adjust the salt.
Add the sautéed mixture into the boiling yogurt and Kashk. Stir frequently since it contains yogurt you should n't stop stirring or it will ruin the dish. Once it starts simmering , allow to simmer for 10 minutes. Now it's ready. The dish is served like Abgusht, a favorite national cuisine. Serve with fresh Persian bread. Put the pieces of bread inside, this is called Tirid in Persian. It can also be served as soup.
