Kuku is a favorite Persian dish made with fresh vegetables and eggs as the main ingredients. It is really easy-made so that's a good option for those who want to try easy, healthy foods.
Ingredients
1 whole lettuce
4 Eggs
1 tablespoon flour
Salt and pepper for seasoning
Frying oil
50 g walnuts
Directions
Wash the Lettuce and chop finely. Put into a mixing bowl and crack in the eggs. Stir well with a fork or spoon. Add the chopped walnuts and season to taste with salt and pepper. Mix the ingredients well. Heat oil in a non-stick frying pan and spread the mixture on. Flatten with a back of your spatula. Allow till one side is properly fried then turn it over carefully and fry the other side as well. Transfer to a serving platter and cut in wedges. Garnish with tomato slices, walnuts and olives. Serve either hot or cool with fresh Persian bread; Sangak is preferred. Bon Appetit!
