Mushroom and Chicken Tahchin

Ingredients
4 cups Rice
1 glass yogurt
1 teaspoon saffron
1 tablespoon barberry
300 g Chicken
1 onion
100 g mushrooms
Yolks of 3 eggs
1 tablespoon sugar
Salt and pepper for seasoning
1/2 glass liquid oil
First, put chicken inside water in a pot and cook with onion, salt and pepper. Once cooked, allow to cool. Remove the bones and shred the chicken into pieces. Set a skillet on the heat and grease with liquid oil. Put barberry and sugar in and sauté a bit. A few moments will be enough or the barberry will burn.
Mix the sautéed sugar and barberry with chicken shreds.
Brew saffron in 1/3 glass boiling water and combine together with yogurt and Yolks of the eggs. Mix well. Take a large mixing bowl and put the mixture, brewed saffron, yogurt and Yolks, as well as strained rice and liquid oil.
Set a non-stick pot on the heat and grease with drops of oil. Spread part of the mixture at the bottom of the pot topped with a layer of chicken shreds and slices of mushrooms. Then spread the remaining mixture of rice and press with the back of your spatula to flatten and compress the content. Cook for 30 to 45 minutes and it is ready! Cut into wedges and garnish with flowers of strained yogurt, suited barberry and Silvered pistachios . Serve hot with fresh herbs like basil leaves and pickled vegetables. Bon Appetit!
