The famous cuisine in Ilam Province has many fans. Serving it with home-made yogurt and fragrant herbs like basil is really delightful. But the delicious greasy rice and meat recipe is not recommended for those who suffer from highly cholesterol level.
Ingredients
Lamb spare ribs, 1 kg
Strained rice, 6 cups
Salt, pepper and turmeric for seasoning
Oil, as required
Black caraway, ground, 2 tablespoons
Cinnamon powder, 1 tbsp
Procedure
Put some oil in a pot over the heat and sprinkle in turmeric powder until the oil starts sizzling. Season the spare ribs with salt and pepper and put it at the bottom of the pot so that the fat touches the bottom. Put the strained rice over the meat and in different layers of rice put fried onion slices, caraway and powdered cinnamon onto the top.
Put the lid on covered in a piece of cloth and cook over the mild flame for 2 hours until well-done. Once ready, turn it over on a platter so that the fried spare ribs are placed on top. Serve hot. Bon Appetit!
Cooking point,
Since the rice has to be over the heat for a long time after adding the meat, you are recommended to strain boiled rice earlier than usual to avoid crumbling.
