Ingredients
Serves 4
3 cups barley grits
Polo herbs, such as leek, parsley, dill, coriander, fenugreek and garlic shapes
1 onion, finely chopped
Spices including, pepper, turmeric powder, saffron , Polo spices and salt
Olive oil
3 to 4 cups strained rice
Procedure
First, set a skillet on the heat and grease with olive oil. Put the chopped onion along with turmeric powder and spices. Sauté a bit and add in the chopped herbs and continue sautéing. Put the barley grits in a pot filled with 8 cups water and a pinch of salt and allow it cook so that the water is evaporated.
Once the grits are ready,mix with the mixture of sautéed ingredients. Spread a layer of strained rice inside a proper-sized pot and over it put the mixture of grits and sauteed vegetables. Keep on to the hop till you don't have any ingredients remaining. Close the lid wrapped in a piece of cloth and allow to get ready on a low flame.
Transfer to a serving dish and serve hot with fresh basil leaves and pickled vegetables. Bon Appetit!
Note,
The dish is very good for those who suffer from anemia. It is anti-cholesterol and strengthens the body.
Polo Spices include, dried Mohammadi flowers petals, cardamom, ginger, green and black Cumin, clove, cinnamon, nutmeg, saffron and pepper. You can get from grocery stores.
