The traditional and savory casserole in Oromiyeh is not only served as a starter but also as the main meal. It is very good when guests are over.
Ingredients
1 kg Yogurt, not watery
1 egg
A pinch of saffron
1 cup Fried onions
500 g stewing meat, cooked
1 glass gravy
Salt and pepper, for seasoning
2 tablespoons corn starch
Directions
First mix together yogurt, egg and saffron in a bowl.
Put the fried onions inside a pot and sauté the cooked stewing meat. Pour in the gravy and bring to a boil. Allow its water to evaporate.
Then add in the mixture gradually in several times and keep stirring till the pot is accumulated with oil. After stirring for a couple of minutes, remove the pot from the heat. At the end, adjust the seasoning, salt and pepper. Dissolve 4 to 5 tablespoons corn starch in cool water and pour in the pot.
Set the pot over the flame again and stir a couple of minutes. Remove from the heat. Transfer to a serving bowl and garnish with carrots and dill, just like the image above. Serve hot.
You can serve it either with or without rice. Bon Appetit!
