Ingredients:

2 cups rice
50 g fish fillets, cooked
1 onion
4 tablespoons leafy vegetables including, coriander, parsley, leek and dill
2 tablespoons brewed saffron
salt , as per taste
Olive oil

Directions:

In a pan , saute the vegetables in a little olive oil on low heat.
Cook rice with salt and oil.
Chop up the onion and saute in olive oil till golden , then add in cooked fish fillets. Grease a round mold ( or any shape of interest) and cover the bottom with a layer of saffroned rice. Then mix portion of rice with fillets and saute the rest in the pan of vegetables. Arrange on top of the saffroned rice respectively. Now carefully, turn the mold over into a desired plate.
