500 g stewing meat
1 onion, finely chopped
5 to 6 carrots, cut lengthwise and halved
300 g green beans, cut into knuckle-sized pieces
2 to 3 tablespoons tomato paste
Salt and powdered black pepper for seasoning
Oil for frying
Pour oil inside a pot on low heat and saute the chopped onion till it changes in color. Add in the stewing meat and saute 5 to 6 minutes. stir in tomato paste and keep sauteing. Pour in 3 cups water and bring to a boil. Reduce the heat to very low and cover the pot and allow to cook 3 horurs. In the second hour add in carrots and season to taste with salt and black pepper. Remember that the stew should be a little juicy. So do not overcook. Transfer to a serving dish of interest and serve with rice, like other stew cuisines. Bon Appetit!
