Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.
Ingredients:
2 tablespoons butter
2 cups chopped broccoli
1 cup chicken, cooked and shredded
1 onion, finely chopped
2 garlic cloves
6 to 8 eggs
3 cups milk
1 tablespoon cream
1/3 cup cheddar cheese
2 tablespoons parsley leaves, chopped
Directions:
Chop up the broccoli and steam. But do not steam thoroughly. Melt butter in a frying pan and add in onion, garlic as ell as steamed broccoli. Saute a bit and allow to cool. In a bowl, whisk well the eggs,milk and cream. Take a large mixing bowl and put all the processed ingredients as well as 1/2 the amount of cheddar. Sprinkle with salt and spices. Mix well. Heat oil in a non-stick frying pan and spread the mixture all around the dish . Before the eggs get firm sprinkle the top with the remaining cheddar cheese. Don't forget to cover the lid till everything is cooked through. Remove o a platter and garnish with Parsley leaves. Serve with bread. Bon Appetit!
