Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.

Ingredients:

Serving 8
400 g spinach, cooked
3 tablesppoons olive oil
1 onion, grated in large size
2 large potatoes, peeled and cubed
Salt and chili powder for seasoning
8 to 10 eggs

Directions:

Saute chopped onion in oil in a pan till a bit golden in color and then add in cubed potatoes and keep sauteing till soft. Beat the eggs in a mixing bowl and sprinkle with salt and chili.
Add the cooked spinach into the pan and saute well. After that, add the sauteed mixture, after cooling, into the beaten eggs. Grease a large round non-stick frying pan with some oil and spread the mixture all around the dish. Try to flatten the surface with a spatula. fry on both sides. Transfer to a serving plate and serve with fresh Persian bread. Bon Appetit!
