Ingredients:
4 glasses bitter orange flowers
3 glasses sugar
3 glasses water
1 glass rosewater
2 tablespoons lemon juice
1/2 dessertspoon cardamom powder

To start, remove the petals and put inside a pot. Pour over water and heighten the heat and bring to a boil. Allow to simmer a bit. Then strain and wash with cold water. Do this 2 more times till the bitter taste is completely gone. Then pour 2 glasses of cold water inside the pot along with 1 glass rosewater and add the strained bitter orange petals. Don't forget to add sugar in between the layers of the petals. Cover and put inside he fridge 12 hours.
After this amount of time, Set the pot over the heat and bring to a boil. Then reduce the heat and allow the jam to simmer slowly and get thickened. The petals should be transparent and clear at this stage. At the end, add in lemon juice, and cardamom powder. Let it simmer a bit and then remove from the heat. Cover the pot with a piece of clean cloth and wait till cool. Then transfer into your desired jar.

Remember that bitter orange flowers go rot very quick; so try to apply them in your cuisine immediately after purchasing.
You can use more water in the jam and make syrup.
