What do we need?
3 medium eggplants
Half cup of cooked and chopped carrots
4 tomatoes
Half cup of cooked and shredded zucchini
One cup of cooked and shredded broccoli
Half cup of chopped raw white cabbage leaves
One cup of cooked and chopped green beans
One medium sweet pepper
One onion
3 tablespoons fresh lemon juice or verjuice
8 to 9 tablespoons sesame or olive oil
Half teaspoon of stew spice, turmeric, and cinnamon
10 g grated Lighvan cheese
One Sangak bread dough

How to make it?
1. Put tomatoes into the pot and let it cook over heat. While cooking add salt, paprika, turmeric, stew spices, Shirazian thyme, cinnamon powder to the mixture. And at the end of cooking, add 2 tablespoons oil with 3 tablespoons fresh lemon juice or verjuice and take the pot’s door to be thicker. So, tomato sauce is ready.
2. Roast the eggplants on the flame spreader plates, then peel and chop them. Then, cook them with 2 tablespoons of prepared tomato sauce and half cup of water and 2 tablespoons oil for about 15 minutes to be completely crushed.
3. Cook broccoli, carrots, green beans and zucchini with steam and chop each of them separately and set aside. Chop raw white cabbage leaves finely and cook it along with chopped sweet pepper with a little water. While cooking, add 2 tablespoons oil with salt and pepper and one tablespoon of Shirazian thyme to the mixture and continue to cook until the water completely be finished. Grate Lighvan cheese too and set aside.
4. With oily or wet hands, broaden the Sangak bread dough on an oily tray. Note that the diameter of the dough should not be too much. Pour the tomato sauce that had already been prepared on the dough and distribute it evenly. Then pour the eggplants mixture over it and spread it evenly over the dough and finally add mixed white cabbages, onions, and sweet pepper and apply a little thyme powder on top.
5. Put your pizza in the pre-heated oven to cook for 15 minutes over medium heat. Then, take out the tray from the oven and distribute grated Lighvan cheese over the pizza and then place it in the oven again for 5 minutes. Take the prepared pizza out of the oven and let it cool slightly. Then cut it and put it in a dish.
