Kalleh Jush is regarded one of the oldest and most simple dishes in Hamedan, Sistan and Baluchistan and Isfahan Provinces. It is served as the main meal. It contains high amount of calcium due to Kashk and is quite useful for the kids and pregnant women. It also is a rich source of protein.
Ingredients,
Minced meat, 300 g
Walnuts, 5 nos
Kashk, 200 g
Flour, 2 tbsp
Onions, 2 nos
Dried mint, 2 tbsp,
Water, 4 glasses
Turmeric, pepper, and salt, as required
Kashk is a dairy product used in Persian cuisine.
Procedure,
Peel the onions and chop them in slices. Pour some oil inside a frying pan and sauté the sliced onions until soft and golden. Grind walnuts and add to the fried onions, stir fry until walnuts are also tender.
Put Minced meat inside a bowl and sprinkle salt and pepper. Knead the meat and shape into small balls and then fry the meatballs in oil. Keep them aside.
Put a pot over medium flame and pour 4 glasses of water, flour, turmeric, salt and pepper and let it boil. Once it boils add in Kashk, stirring finely.
After 10 minutes when it is boiling, add in fried onions, walnuts, along with meat balls. At the end, sprinkle dried mint and allow it to boil for another 10 minutes. Then remove the pot from the heat and put inside a proper dish. You can serve it with bread.
Cooking point,
You can apply some garlic cloves. Also you can increase or reduce the amount of Kashk, according to your taste. Consuming meat is optional.
