Vabishgay or Vavishgay Badenjan is a traditional dish in Tabriz.
Ingredients for 4 people
Eggplant, Medium-sized, 2 nos
Mixture of minced meat and soybean , 100 grams
Tomato, 3 nos
Potato, Medium-sized, 1 no
Chicken giblets, sliced, 100 grams, as required
Onion, Medium-sized, 1 no
Green pepper, diced, a cup
Mushroom, 4-5 nos
Grated Mozzarella cheese, 50 grams
Salt, pepper and turmeric, as required
Parsley and dill, 1 tbsp
Procedure
Soak the soybeans for a couple of minutes and after draining mix it with minced meat to make a smooth paste.
Peel the eggplants and dice them. Put them in thick salt water to remove its bitter taste.
Finely dice tomatoes, potatoes, chicken giblets, green pepper and mushrooms and put them aside.
Slice the onions and fry in some oil and turmeric until golden brown. Then add the mixture of minced meat and soybeans. After a couple of minutes add diced tomatoes.
If needed, apply one or two tablespoons oil to the pan and add chicken giblets and sauté.
Strain the eggplants and dry. Separately, fry diced potatoes, eggplants and mushrooms.
Add eggplants, mushrooms, and diced green pepper, while stirring well. Add herbs, parsley and dill, as well as grated cheese, mixing well. Season with salt and pepper.
In the last 5 minutes, add fried potatoes, stirring well. Be careful not to crush them. Put the lid. After 5 to 6 minutes the dish is perfectly ready. Put it in a proper dish and serve with bread.

The whole time for cooking is 35-40 minutes at most.
For each glass of water, use two tbsp salt in a bowl and put the eggplants inside. After 15 minutes drain them.

This is a very complete dish which is made quickly. It is almost often used for dinner in some cities.
