Ingredients
Serves 4 to 6
Omaj, 1 cup
Leek and green onions, 500 g
Fried onions, 2 tablespoons
Garlic cloves, 3 nos
Lentils, 150 g
Black-eyed beans, 150 g
Egg, 1 no
Salt, pepper and turmeric, for seasoning
  Omaj Ash
Procedure
Soak the Black-eyed beans overnight and put inside a pot and set it over the heat till half-cooked.
Add the lentil and once softened a bit, add in the onions, turmeric, chopped leek and green onions as well as garlic cloves, sautéed together in a saucepan.
When the pot starts simmering, pour in 2 cups of cold water, stirring constantly to avoid the Omaj sticking together. After 10 minutes, adjust the salt and pepper. Crack the egg and add in gradually, while stirring till it becomes solid. Transfer to a dish and garnish with fried mint powder. Bon Appetit!
Recipe for Omaj
Mix together 1 cup of flour and 1 tablespoon salt and sieve.
First method,
Spread the flour on a tray and sprinkle water with your hands put inside a bowl of water. Splash over the flour and move your palms over the flour. Now rub your palms against each other and make thin long strings of the dough stuck into your palms. Repeat this till you prepare 1 whole glass of Omaj.
Then put the Omaj on a tray and transfer to the oven, with the door open, for 20 minutes till dry.
Second method
In this one simple way, combine together 1 cup of flour with salt and put inside a bowl and gradually pour in water and go on till the dough does n't stick into your palms.
Then grate the prepared dough in large sizes. Put the pieces on a tray but be careful to observe a distance in between. Put the tray inside the oven for 20 minutes till dry. You can also expose the tray in the sunlight till ready to handle.
The cuisine includes 1,300 kilocalories in general.
