Abgusht is an old national favorite to the Iranians. It is like a gravy made with beans, meat pieces and potato, as the main ingredients. The dish is prepared in different ways across the country. Although the base is the same. In a bowl filled with gravy, you put Persian bread scraps like Sangak and Lavash, eaten separately. The ingredients are mashed in a bowl. Pickles and fresh herbs make the dish really appetizing. You can give it a try with the recipe below if you don't have a chance to visit the country.
Ingredients
Fresh lamb meat, with bones, 500 g
Tomato paste, 3 tbsp
Onions, 2 nos
Fragrant herbs like thyme, parsley and the like, 1 cup
Sour Lavashak, 100 g
Pomegranate paste, 1 tbsp
Chickpeas and white beans, 1 cup altogether
Green plums, 5 nos
Dried prunes, 4 nos
Turmeric and salt , as per taste
First let's tell you about Lavashak. It is made of crushed fruits like, plums, prunes, peach, apricots, apples, cherries and the like. Put your desired fruits inside a pot, yellow ripe plums are recommended for their taste, and fill with some water. Season with your desired amount of salt and let it boil for several minutes till the skins are almost removed and you have a thick juicy . Strain and remove the seeds. Take a tray and spread the evenly paste on the tray and flatten with the back of your spoon. Put the tray exposed to the sunlight till the content is entirely dried. Remove the dried layer off the tray once ready. This is called Lavashak, which is every kid's favorite. Now back to the main recipe!
Pour water inside a proper-sized pot and bring it into a boil. Put inside the pieces of meat, chickpeas, and beans. You are recommended to soak the chickpeas and beans in advance to remove its flatulence feature. Once chickpeas and beans are cooked, stir in fragrant herbs,prunes, pieces of sour Lavashak, pomegranate paste, and green plums.
Season to taste with pepper, salt and spices. After 30 minutes, the dish is ready. You can adjust the sour flavor of the cuisine depending on your own amount.
Serve it in a proper bowl and serve with fresh Persian bread and leek, basil, and radish. Bon Appetit everybody!
