Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.
Ingredients
400 g thin okras6 eggs
2 medium onions
1 clove garlic
Salt, black pepper powder, turmeric for seasoning
Oil for frying
Directions
Grate the onions in large size of the grater box. Then saute in oil in a pan. Once the onions change in color a bit, add in he washed and properly dried okras. They should be cut in rings. Saute okra rings and add in the pressed garlic. Sprinkle with salt, pepper and turmeric powder and keep sauteing. Make sure to stir well. Remove the pan from the heat and allow to cool.In a mixing bowl, crack the eggs and beat well Once the white and yolks are finely mixed, add in the sauteed ingredients and whisk properly. Put a non-stick pan over the heat and pour in drops of oil. Then add the mixture and spread all around the pan when the oil is getting hot. Allow it to fry. When one side is done, turn Kuku over to fry the other side. It is ready now! As simple as that! Place in a large plate and serve with fresh Persian bread. Yummy! Bon Appetit!
