Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.
Courgette Kuku is a healthy dish for diabetics and those with a high cholesterol level. Courgette is anticancer and helps to reduce the symptoms of heart diseases, prostate and intestine problems.
Ingredients:
3 courgettes4 eggs
1 tablespoon white flour
Tip of a teaspoon saffron
Tip of a teaspoon cinnamon powder
Salt and ground black pepper powder for seasoning
Oil for frying
Directions:
Wash the courgettes and peel. Then grate them in large size. In a mixing bowl crack the eggs and beat well till bubbly. After that, sprinkle with white flour, salt, cinnamon, and saffron and whisk properly till mixed well. Flour is applied to absorb the water from courgettes and have a consistent ( not loose) mixture.Add grated courgettes and mix well again Pour oil in a non-stick frying pan and heat . Then spread the mixture all over the pan. To have charming green-colored, nice-smelling Kuku, sprinkle dried dill on top. Increase the heat for a minute and then lower. Close the lid and allow to cook. After a few minutes, cut Kuku in wedges and turn over each part till the other side is fried as well. Do not put the lid this time to have a more crispy and tasty cuisine. Transfer to a plate and serve with bread and fresh vegetables. Bon Appetit!
