Ash is a Persian cuisine, a sort of thick soup, which is tried throughout the countries. The main ingredients include beans, peas, leafy vegetables and so on.
If you are into sour dishes, then this is the right recipe for you to try. Green plums might also be your favorite fruits. You can not only consume the raw fruit but also take advantage of the sour flavor in your cuisines.
Green Plum Ash is a great dish you can try in early spring and the taste will stick in your mind forever, I bet!

Ingredients:

750 g green plums
300 g ground mutton
1 kg leafy vegetables: parsley, leek, dill, coriander, spinach and beetroot
2 cups wheat groats
1 cup kidney beans
1 cup lentils
3 tablespoons dried mint
500 g onions
Salt, as per taste
1 teaspoon powdered black pepper
Liquid oil

Procedure:

Soak the kidney beans in a bowl of water and allow 2 staright days. Equally, soak lentils and wheat groats 1 hour separately.
Peel one of the onions and chop finely. heat oil in a frying pan and saute chopped onion. Then add in ground meat and keep sauteing. Don't forget to sprinkle with salt and pepper powder. Put the lid and allow the meat to cook. In the meantime, peel the rest of the onions and cut into slices.
There is a point here; instead of fried ground meat, you can mix raw ground meat with 1 large onion, grated, and then season to taste with salt and black pepper. Make into meatballs and fry them in oil. At the end of cooking process, stir in the meatballs and keep some for garnish.
Prepare a large pot and grease with a little oil and set over fire. Fry the sliced onions and sprinkle 1 tablespoon dried mint and saute a few seconds. Transfer into the big pot. Remember to keep aside some fried onions for garnish.
Put the soaked beans inside a pot with 2 glasses of water and allow till half-cooked. Then add in lentils and wheat groats and wait till they are half-cooked as well.
In the meanwhile, clean the leafy vegetables and wash. Then chop in rather large size. Once the grains are all half-done, stir in the chopped vegetables as well as 2 glasses of boiling water.
Wash the plums and remove their stems. When the vegetables are done, add the green plums along with fried ground meat. Reduce the heat to low and allow till Ash is settled.
Another point: Instead of applying all raw plums in the cuisine, you can cook some and then remove their seeds with a spoon. Then pass through a sieve and add the extract into Ash. Apply the rest in whole.
At the end, drizzle a small pan with a little oil and heat over the stove. Saute their remaining 2 tablespoons dried mint and saute a bit. Transfer Ash into a desired bowl and garnish on top with sauteed mint and fried sliced onions.
In case you don't want a very sour cuisine, you can stir in 2 tablespoons sugar while cooking.
