When I was a kid, my mum used to make Morassa'e Polo quite often! I made myself to eat but I could n't! I did anything to forgo eating!You know why? It was very sweet with plenty of slivered nuts; what I hated the most!
A few days ago, I visited a friend of mine and she made Morassa'e Polo along with a couple of other foods. She made me eat a little. I accepted and tried it! To my surprise, it was not't bad at all! I thought like my taste had changed over years. It was so yummy that I decided to try one more time and put in my plate again!
It's a good idea to try this cuisine at least once!
The cuisine contains 2,125 kilocalories totally; 4 people will receive almost 532 kilocalories each.
You can serve it with a drink like Doogh to get dairy products as well. A plate of salad with fresh leafy vegetables and greens like lettuce, tomatoes, carrots, and wheat sprouts will be a good comapny too. To make it tasty, apply fresh lemon juice, olive oil or vinegar rather than mayonnaise!
Doogh is a savory yogurt-based beverage popular in Iran and Azerbaijan, It is sometimes carbonated and seasoned with mint. Outside Iran and Azerbaijan, it is known by different names.
Ingredients
Serving 4
3 glasses rice, 560 kilocalories
300 g chicken breast, 500 kilocalories
1 glass sultana raisins, 120 kiocalories
1/2 glass barberries, no calories
5 tablespoons slivered almonds, 225 kilocalories
5 tablespoons slivered pistachios, 225 kilocalories
1 glass chopped onion, 25 kilocalories
1 knuckle-sized crystallized sugar, 20 kilocalories
5 tablespoons, canola oil, 450 kilocalories
Orange rind slices, 0 kilocalorie
Seasonings like salt, turmeric powder, and brewed saffron, no calorie
Directions

First, soak rice in salted water2 to 3 hours and then put in the boiling water in a pot and strain.
In a frying pan, heat 2 tablespoons of oil and add chicken pieces. sprinkle with spices, salt, turmeric and brewed saffron. Saute a bit and pour in 3 glasses of water and allow to cook on low flame. In another pan saute slivered almonds, and pistachios in 3 tablspoons of oil and a little saffron.
Separately, saute sultana raisins and orange rind slices( made sweet with crystallized sugar). Once rice is cooked, remove to a platter; a layer of rice and chicken pieces over. Repeat this to the top and garnish the top with sauteed slivered almonds, pistachios, sultana raisins, barberries and saffroned rice.
Morassa'e Polo was first tried in the Safavid era when the Persian cuisine developed dramatically and many dishes were made to serve in receptions.
It resembles the eye-catching Persian carpet; when you garnish the dish with a variety of colorful nuts, and fruits you create a piece of beauty just in a delicious food. Barberries, and slices of orange rinds is more favorite in the provinces of Fars and Khorasan. In Khorasan the dish is called Ranginak Polo, A colorful plate of rice!
So if you receive guests from these 2 provinces make sure to welcome them by cooking the favorite dish. sometimes it is mistaken with Shirin Polo and some key points are left out in cooking. Here is the difference; in Shirin Polo the slivered nuts are put in different layers on to the the top. Carrots are the main ingredients . Whereas in Morassa'e Polo the slivered nuts and other ingredients are spread over the top of rice. Plus it doesn't contain carrots slices.
The Iranian rice is applied and should be strained and Ketteh (non-strained) is not acceptable. To make the rice grow in length you can add 1 tablespoon of yogurt once the rice is boiling.
When purchasing slivered almonds and pistachios, choose those offered n packages. Check the production and expiry date. Avoid using old nuts!
To prepare the orange rinds, peel the tangerine-colored skin of the fruit and cut them lengthwise. Put in water and bring to boil 3 times; each time 7 minutes and remove the water each time. On the third time, add a knuckle-sized crystallized sugar to make them sweet-flavored. the spice that should never be omitted is saffron. You are recommended the high-quality product.
To prepare the chicken make sure to apply plenty of turmeric powder once cooking.
The best drink to go with the dish is sour cherry syrup, made out of cherry jam and water. home-made and cool glass of the drink is preferred.
If you are obese, eat a maximum of 5 tablespoons of the rice for lunch. To make it, you are recommended to apply as little sugar and oil as possible. Serve with a salad or herbs and greens. Eat with a fork to reduce the speed of eating. This way even with a little amount of food you will feel full.
If you have blood fat, apply olive oil in your cuisine; of course limit its amount as it is calorific and overusing it results in obesity. Also reduce the amount of nuts used; as they contain a high calorie and therefore might lead to hyperlipimedia. The best option for a drink is grapefruit juice which helps to adjust your blood fat.
If you have a high blood pressure, reduce your salt as well. Instead, multiply the usage of nuts , orange slice, barberries and raisins; of course do not apply sugar for making them sweet. As a drink go for a glass of fresh orange juice which is rich in potassium and adjusts your blood pressure.
