Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.
Ingredients:
1 1/2 glasses carrots, grated1 1/2 glasses sweet corn
1 egg
2 onions, finely chopped
1 tablespoon parsley or coriander leaves
1/2 glass milk
1/2 glass baking flour
1/2 glass corn flour
1 desserspoon baking powder
2 dessertspoon curry powder, if desired
Salt, a pinch
Oil for frying
Directions:
Put all the ingredients inside a large mixing bowl and mix well. Heat oil in a non-stick frying pan and shape pieces of the mixture into round forms. Then place them in hot oil and allow till one side is fried . then go over the upper side and do fry it as well. Put them in a serving dish and garnish with desired vegetables. Serve with bread.
