Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.
Ingredients
Serving to 86 to 10 eggs
2 to 3 cups cheddar cheese
6 pieces of bread chopped into small cubes
2 cups milk
Salt and ground black pepper powder for seasoning
1 cup sweet corns
1/2 cup broccoli, finely tipped
1/2 cup hopped mushrooms
1 cup bread, finely chopped
1 dessertspoon basil leaves or thyme
Directions
In a proper-sized mixing bowl, crack the eggs and beat well. Then stir in milk and cheese. Mix well. Then add in bread pieces and season to taste with salt and pepper powder. Add in mushrooms, broccoli and sweet corns as well and keep stirring.Grease a Pyrex dish and spread the mixture inside. Sprinkle with basil leaves or thyme, finely chopped. you can also apply dried herbs. Put the dish inside the oven 5 minutes and it is ready!
Another alternative for those who have no acces to the oven is to spread the mixture in a non-stick frying pan and fry 10 to 15 minutes on both sides. Then cut in wedges like pizza. Serve hot! Bo Appetit!
