In winter, Ash or soup are among the most popular dishes. Everybody craves for a bowl of Ash ( strong soup). Here is the recipe for a delicious meal which will interest you in cold weather. The recipe contains meat and grains and therefore is considered a good meal for lunch so you are recommended not to cook it for dinner.
Ingredients:
300 to 400 g lamb shank
1 medium onion
200 g wheat groats
100 g white beans
100 g kidney beans
100 g chickpeas
100 g cranberry beans
3 to 4 tablespoons fried, sliced onion
1 kg eggplants
200 g Kashk, a dairy product
Salt, pepper and turmeric powder for seasoning
2 tablespoons Sauteed mint powder
1 tablespoon sauteed garlic
1 tablespoon sauteed onion
procedure
Wash the meat and put in the pot along with onion and water. Allow to cook well. Then remove and cut into shreds.
Peel the eggplants and sprinkle with salt so that the bitter water of the eggplants is drained. After a half hour, dry them with paper towel and fry in a pan. Let them cool and then chop them.
Wash the wheat groats and put in a pot with 1 jug of water and set over the heat till cooked and a bit thick in consistency. Keep stirring to avoid sticking. If you feel the water is too much, make sure to pour in lukewarm water. It should n't be so thick just like barley soup.
Cook all the soaked grains properly and add into the wheat. Equally, stir in the fried onion and turmeric powder. Finally add in the cooked, shredded meat, fried and chopped eggplants and keep sauteing. The dish needs stirring well naturally. So remember to stir finely to avoid sticking the ingredients to the bottom. Allow till all ingredients are mixed and settled.
.Once the desired thickness is achieved, turn it off and transfer onto a serving bowl. Garnish with Kashk, sauteed onion, garlic and dried mint.
Serve hot with fresh bread. Bon appetit!
