1 tbsp. lemon juice
115 g cream cheese
18 biscuits
1 tsp lemon rind
Truffles for decoration
1 ½ cups white chocolate

1. Put biscuits inside a mixer and pulse till finely-powdered.
2. Then add cream cheese, lemon juice, and thin lemon rind grates. Keep mixing to get a constituent mixture.
3. Cover the oven tray in a little oil. Take a tablespoon off the mixture and shape into small ball. Place a straw inside the ball and keep in the fridge 30 minutes.
4. Melt the white chocolate according to bain marie method or do it inside the microwave. Roll the balls in white chocolate and cover with colorful truffles all over. Let rest in the fridge 10 minutes to get ready. Bon appetite!
