Yarmeh Ash is a local dish in Bojnord, North Khorasan Province, which is made out of a mountainous plant called, Charish, growing in mountains in springtime. You can make it with spinach too.
Ingredients for 6
Chickpeas, one glass
White beans, one glass
Wheat groats, 2 glasses
Charish or spinach, 1 kg, chopped
Salt and pepper, as required
Doogh, Persian national drink made with yogurt, salt ,water and herbs, as required
 Yarmeh Ash
Procedure
First, separately cook peas and beans, soaked in water in advance. Then, cook wheat groat and add in Charish or spinach and keep cooking. Once vegetables are cooked, add in cooked peas and beans along with salt and pepper and let it settle over a mild fire. Finally, transfer to a proper dish and serve with Doogh.
This recipe contains no oil and therefore is a healthy and yummy dish.
If you ever travel to Mashhad in spring and pass by Bojnord, the center of North Khorasan, make sure to get some Charish to make this delicious Ash.
Wheat groat is called Yarmeh or Yarmah among the Turk Bojnordi.
