Dried Nuts Ash is a traditional dish which is Hamedani's specialty. Ash is a sort of thick soup.
Ingredients,
Herbs, like leek, parsley, coriander and spinach, finely chopped, 500 g
Lentils, 1/2 cup
Chickpeas, 1 cup
Beans, 1 cup
Mutton with bones, 200 g
Onion, 1 no
Dried apricot pieces, 1/2 cup
Dried sour cherry, 1/2 cup
Dried peach pieces, 1/2 cup
Dried Sour plum, 1/2 cup
Ash noodles, as required
Salt, pepper, and turmeric, as required
Vinegar, 2 to 3 tbsp
Grapes syrup, as per taste
Fried onions or garlic for garnishing
Procedure
  Dried Fruits Ash
Soak Beans and chickpeas overnight. And also drench dried fruits in water for hours. Cook
together meat with bones, soaked beans and chickpeas as well as pepper and turmeric powder in
water. In the last 20 minutes add in soaked fruits and chopped herbs to the gravy, and stir well. If
it is thin, you can add in 2 to 3 spoons of rice. To this add noodles. Combine vinegar and grapes
syrup. If there is no syrup available, you can mix it with a little sugar. At the end, add it to Ash.
Allow it to cook well. Convert it into a desired bowl and garnish with fried onion or garlic. You
can also apply dried mint leaves, fried, on top.
