Ingredients
Serves 6
500 g calf meat
50 g Barberries
100 g Silvered almonds
1 medium onion
Salt and freshly ground black pepper for seasoning
2 tablespoons frying oil
1 tablespoon sugar
1/2 teaspoon saffron
4 Dried limes
Procedure
First chop the onions nicely and sauté in oil in a pot. Add in the tomato paste and stir.
Then add in the stewing meat and keep sautéing. Pour in 2 glasses water and bring to a boil. Reduce the heat to low and allow the meat to cook for 1 hour. After that add in almond slices. After 10 minutes, add in the dried lime( Don't forget to make holes in limes with a fork). Allow the stew to cook for another 1 hour on the low heat. Wash the barberries and sauté in oil( animal oil or butter are preferred) in a saucepan. Add sugar and ground saffron and sauté as well. Add the mixture of sautéed barberries and sugar into the stew and cook for last 5 minutes over the low flame till the ingredients are mixed. Once ready, remove to a serving dish and serve with rice.
