Ghalyeh is a traditional and authentic dish in Dezfool. In the old days, it was cooked in traditional ovens. Over time, it was replaced with an oil cooking utensil.
Today, if you do it in slow cooker, it will work.
Ingredients for 4 people
High-fat meat, boneless, 200 grams
Split chickpeas, 200 grams
Rice, 1/4 cup
Wheat groat, 1/4 cup
Eye beans, 1/4 cup
Onion, Medium-sized, 2 nos
Garlic bulb, half
Black plums, large, 1/2 cup
Dried apricots, 1/2 cup
Pomegranates puree, as required
Sugar, 1/2 cup
Procedure
Add in garlic, onions and a little salt. Pour in water so it covers the whole content and you won't need any more water again.
Turn high the heat of a stove or slow cooker so the water boils.
Don't close the lid before boiling or else the food will overflow because of groat and rice.
Once it starts boiling cover it and lower the heat. Let it cook slowly for about 3 to 4 hours.
When the content is well-cooked, crush it finely with a masher to make a smooth paste.
Then again put it over the flame and add sugar and pomegranate puree. In this stage, you must stir constantly despite the previous stage to avoid sticking. After 10 to 15 minutes, switch off the gas or slow cooker. You can serve it in your desired dish and garnish with hot oil or pennyroyal.
Key point, once the food is brought to boil, do not stir at all since it might stick. If you need extra water during the cooking, make sure to apply boiling water .
