Reshte Polo, a dish in Iranian cuisine, is made more with cooked meat, fried onions, dates, and currants (or dates and currants altogether). It is a custom to eat the dish in Norouz holidays. Here is the recipe used in Behshahr.
Ingredients,
Rice, 3 cups
Noodles, used in cooking rice, 350 g
Oil, as required
Salt, as required
Currants, 1/2 cup
Fried onions, as required
Melted butter, as required
Soak rice in salted water for 8 to 10 minutes. Then drain the water. Pour some water in a pot. Put it over high flame. When it is boiling, put the rice inside. In another pan sauté noodles.
Strain the rice and add half of the rice into the pot. Then add in the fried noodles and put the remaining rice over the noodles and let it cook well.
Fry Onions in a dish and add in currants, stirring a little till sautéed finely.
Once the rice is well-done, put it in a platter and top it with noodles, fried onions and currants. Drizzle melted butter on the rice.
