Ash Kufta is made in Fars Province, Shiraz to be exact.
Ingredients,
Ground beef, 250 g
Chickpeas, 500 g
Rice, 500 g
Herbs like leek, garden cress, tarragon, parsley, 1 kg altogether
Filling ingredients,
Fried onions,currants, walnut small pieces, salt, pepper, and turmeric
Oil, as required
Procedure
Ash Kufta
Soak rice and chickpeas in water separately for 12 hours. Once ready, drain the water and grind with herbs. Take part of the ground mixture for Ash. Mix the remaining with ground beef. Knead well. Don't forget to sprinkle salt, pepper, and turmeric. Grind again till you get a soft paste.
Take a piece off the paste. Make a hollow space in the middle of it and stuff it with fillings. Shape it into balls. Repeat this till all the paste is done. In a large pot pour some water and put over the flame. Bring it to a boil, arrange the balls or Kuftas inside the pot. Let it boil for 15 minutes.
On the next stage, take the mixture we left aside for Ash and put inside a pot along with 1 spoon of oil, and salt plus turmeric. Put the pot over the low flame and let it cook well. Stir from time to time till it does n't stick to the bottom. Ash is ready now. Arrange prepared Kuftas in a desired dish and pour Ash over. Enjoy the taste!
