Gazaneh (nettle) Ash or Torsh Ash is a traditional dish in Mazandaran Province. It contains beans which are rich in protein. The dish's unique flavor owes to butternut squash and fragrant herbs.
On the last Wednesday of the year, women in Mazandaran prepare this cuisine which has blessings and healing gifts.
Plants are used in Gazaneh Ash, from the plum blossoms to Becha Becha, which is a kind of primrose, and Violet as well as other vegetables. Parsley and coriander give it a unique flavor. Nettle plays a big role. Perhaps the sour flavor of Ash means boredom of the old year!
From long ago the dish was also made on the third day after the death of a person and all invitees would be given Ash which implied their hatred of sadness and unhappiness. As said earlier, on last Wednesday of the old year, people of the region cooked Gazaneh Ash and made offerings for the sake of their dead. If they have plenty to do and don't have enough time you cook Ash, they, for sure, get portions from their neighbors or relatives!
Now Ingredients,
Wheat flour, 500 g
Beet, 50 g
Lentils, 50 g
Chickpeas, 50 g
Beans, 30 g
Fava beans, 50 g
Butternut squash, chopped, 100 g
Coriander, 100 g
Parsley, 50 g
Garlic cloves, sliced, 50 g
Yogurt, 1 kg
Salt, 10 g
Turmeric, 10 g
Nettle, 500 g
First, make dough out of flour and spread it with a rolling pin. To make a thin paste, you should knead it well. Spread the thin layer of dough on a dish and sprinkle some flour over. Fold the dough slowly while sprinkling flour under it till it does n't stick.
After that, cut the dough horizontally to make thin noodles.
Cook chickpeas, beans, beet and Fava beans together. Add herbs and squash as well as salt and turmeric. Once they are cooked, dissolve yogurt in water and add to the contents. Stir in the meantime till it starts boiling. Once boiled, add in noodles and allow it to settle. Apply fried garlic cloves to garnish. The healthy Ash recipe is ready to serve.
