Shalkineh, is authentic to the Kurdistan. It is usually prepared in large amount over a device, named Saj which is used in traditional cooking.
The thin bread ( tortilla) is made as a traditional cuisine in gatherings and happy occasions especially in springtime. But you can bake it in other seasons at home. The bread is rich as it contains eggs, milk and flour and therefore is considered a nice side meal for the kids.
Ingredients for 4,
Flour, as required, its amount depends on
Milk, 2 liters
Eggs, 10 nos
Salt, 1 tbsp
Baking powder, 1 tbsp
Procedure
First, break eggs and beat finely with a whisk or fork in a bowl. Pour in milk. After that, add flour. Its amount should be enough to make a smooth paste. You can experiment over time.
Now, sprinkle in 1 spoon of salt and 1 spoon of baking powder. Put the prepared mixture in a place with a proper temperature till it is ready for baking just like the bakers do.
Once ready, put a large frying pan over the heat, drizzle oil at the bottom of the pan. Each time take one ladle of the paste and spread in the pan. Let it cook and get golden in color.
Once golden, traditionally the Kurdistani grease it with animal butter and eat.
You can add sugar to give it a sweet flavor.
