The dish is locally made in Chahar Mahal Bakhtiyari province.
The cuisine is actually lamb meat and chicken in one single skewer.
Ingredients
Fresh lamb meat, or calf fillets, 500 g
Chicken breast, 500 g
Butter, 50 g
Onions, grated, 3 nos
Brewed saffron, 2 tbsp
Fresh lemon juice, a few drops
Salt and pepper, a pinch
Yogurt, 1 glass
Directions,

Chop Lamb meat into finger-sized pieces and put in the mixture of grated onions, yogurt, brewed saffron and pepper to marinate. Refrigerate it for 2 to 3 hours.
Equally, cut chicken breast into finger-sized strips and let it rest in the mixture of grated onions, brewed saffron, salt, fresh lemon juice and yogurt. Put it in the fridge for 2 to 3 hours.
Prepare the barbecue and take the seasoned meat and chicken from the fridge. Put a piece of lamb meat into a skewer and then one chicken on top. Do this till the skewer is almost filled so that you can turn it over the fire easily. Do not put too many pieces in one skewer. You are recommended to arrange them so that the first and last pieces are lamb meat since chicken pieces are cooked quickly and might burn. Do it over a mild flame and once done, rub butter over the pieces to give it a better flavor. Bon Appetit!
