Barberry Ash is an authentic dish in North Khorasan Province.
Recipe 1
Rice, 375 g
Herbs like parsley, leek, fenugreek and greens, like spinach, 1 kg altogether
Pepper, as per taste
Salt, a pinch
Turmeric powder, as required
Barberry juice, 5 cups
Split peas, 75 g
Onions, 275 g
Dried mint leaves, 3 tbsp
Persian hog weed, or Golpar, as per taste
Directions
  Barberry Ash
Wash the herbs and spinach and chop into tiny pieces. Pour 3 medium bowls of water inside a pot and add in chopped herbs as well as cleaned rice. Once the rice starts cooking and Ash becomes a little thick in consistency. Fry the sliced onions in a frying pan along with turmeric and salt. Also pour in barberry juice, stirring.
Season with Golpar to give the dish an out of this world taste. Sauté dried mint leaves powder in drops of oil in a pan and keep aside for garnishing.
If you want to make Lemon juice , Tomato juice, Sour orange juice, Unripe grapes juice, or dried prunes Ash cuisine, you should replace barberry with them. The rest of the ingredients are almost the same. Give Ash to cook over the mild flame, stirring occasionally to avoid sticking. Once it thickens and gets your desired taste, you can serve it hot in bowls. Bon Appetit!

Ingredients
Half-round rice, 1/2cup
Barberry juice, 3 tbsp
Seasonings like, turmeric, salt, pepper and ginger, as per taste
Sesame oil, a few drops
Wheat groats, 1 cup
Onion, large, chopped, 1 no
White beans, 1 cup
Unripe grapes juice, as per taste
Herbs like, leek, parsley, fenugreek, and greens of spinach, chopped finely, 5 cups
Directions
Soak the grains in water for a few hours. Cook white beans in a pot filled with water and sprinkles of turmeric powder.
Once white beans are tender, add in groats, Rice, lentil and chopped herbs. Season with a pinch of salt, pepper, and cooked ginger.
In a separate dish fry the chopped onions in drizzles of sesame oil and turmeric powder plus spices. Add them to the pot.
Before Ash is thoroughly settled, stir in barberry juice and let it cook over the mild flame till thick. You can serve in your desired serving bowls. If desired, apply drops of unripe grapes juice once Serving.
