Meat and beans is a traditional cuisine in the city of Isfahan which is prepared in copper pots. Its gravy is served with fresh bread. Pieces of bread are put into the bowl of the gravy and this is called Trid in Persian.
Ingredients, Serves 4 to 6
Lamb meat, 100 g , spare ribs are preferred
Leek, parsley, and fenugreek, 500 g
White beans, 2 cups
Rice, 1/3 cup
Salt, black pepper, and turmeric powder, as per taste
Onion, 1 no
Procedure
Take a Medium-sized pot and pour it with water so half of the pot is filled with water. Turn on the heat and bring it to a boil over the high heat. Clean the lamb meat, wash and put inside the pot along with one whole onion, salt and pepper. Let it simmer and remove the white bobbles on top of the water. Then add in the white beans plus turmeric powder and give it time till meat and beans are half-cooked. If you apply a pressure cooker, it will take half an hour and for a pot you will have to give it 1 hour. After that, add in the pre-soaked rice. And let it settle over the low heat till all the ingredients are cooked. Serve it in a desired bowl. Bon Appetit!
