Pakora is a super delicious dish which has many fans in the south of the country, especially in Abadan. Surely, you will enjoy it too.
Ingredients
White flour, 1/2 cup
Chickpea flour, 1 glass
Onion, finely chopped, large, 1 no
Pepper, chopped, hot, 1 or 2 nos, if you don't have fresh pepper available, you can hot red pepper powder.
Coriander, chopped finely, 1/4 glass
Dill, chopped finely, 1/4 glass
Leek, finely chopped, 2 tablespoons
Baking powder, 1 dessertspoon
Turmeric, 1 tsp
Salt, as per taste
Water, 1/3 glass
Frying oil
Mix together white flour, chickpea flour, salt, turmeric and water. Add in the chopped onions and hot pepper stirring with a spoon till well-combined.
Also add in finely chopped coriander, dill,and leek and mix.
Put a non-stick frying pan over the heat and drizzle with some oil. Take 1 tablespoon off the mixture and once the oil is heated, put inside till fried. Do this with the rest of the mixture.
Pakora should be served hot and with pepper sauce or hot tomato sauce.
Recipe for the sauce
Tomatoes, cubed, 2 cups
Lemon juice,2 tablespoons
Garlic cloves, 2 nos
Parsley, finely chopped, 1 tablespoon
Brown sugar, 1 tbsp
Hot pepper sauce, 1 or 1 1/2 tablespoons
Salt, as per taste
In a mixing bowl, combine together all the ingredients and transfer into a saucepan on the low steady heat. Allow it almost 30 minutes till the water from the tomatoes is gone and you get a thick sauce. Serve Pakora with fresh Persian bread. Bon Appetit!
