Ingredients
Dried dill, 3 to 4 tablespoons
Eggs, 3 nos
Garlic cloves, 3 nos
Oil and butter, 100 g
Mazandaran 's fava beans, 500 g
Water, 1 cup
Salt, pepper, turmeric and cinnamon for seasoning
First remove the skins of fava beans and mash with garlic cloves. Add in dried dill plus salt and turmeric and sauté in melted butter in a frying pan. Add in water and bring to a boil. When it is boiling, crack in the eggs and allow them to get solid a bit. Once the water is gone off, eggs are formed, and fava beans are well-cooked, stir with a spatula and fry the mixture in a little oil in another pan. Adjust the seasoning and sprinkle in pepper and cinnamon as well, stirring constantly till thoroughly fried. It is ready now. Remove from the heat and transfer to a large plate.
